Summary

Supervises preparation of all pastry products and desserts to meet production requirements. Is responsible for the production of baked goods and other desserts according to standardized recipes. ensures a state of hygiene and clenaliness in preparation of all baked goods and desserts.

Essential Responsibilities and Duties

1.Prepares required items in the quantities specified according to daily menus for regular and modified diets for all service areas (Patient, Employee, VIP and Catering).

2.Consults with Chef and Dieticians regarding modified bakery items.

3.Orders weekly or daily supplies as needed to maintain pastry room levels.

4.Adheres to and maintains HACCP standards in all aspects of job performance.

5.Observes a high standard of hygiene in the preparation of baked goods and maintains work area and equipment in a neat and orderly manner.  Completes required documentation (monthly reports, forecasting and recipe development).

6.Prepares specialty cakes, breads and desserts for VIP service and special functions i.e. salt-free breads, cakes, etc. in compliance with the patient’s diet order.

7.Conducts training to Bakery staff on new recipes and develop standardized recipes for consistency of products.

8.Follows all Hospital related policies and procedures.

9.Participates in self and others education, training and development, as applicable.

10.Performs other related duties as assigned.

Education

Associate Degree/ Diploma in pastry preparation and baking or High School Education required.

Experience Required

Three (3) years of cooking experience with Associate Degree/ Diploma or five (5) years with High School in the pastry section of an Institutional Food Service Operation, Hotel, Restaurant or Bakery required. 

Other Requirements(Certificates)

*Formal training or apprenticeship in pastry preparation and baking required with High School acquired.

*Knowledge of personal computer usage is an asset
